No-Bake Vanilla Coconut Rum Truffles

but wait, the recipe for these delicious Vanilla Coconut Rum Truffles does not require any baking!?!

Yes, indeed! They are “No-Bake Vanilla Coconut Rum Truffles” – it’s as easy as it can get and oh so, tasty!

1 bowl, 2 spoons and 30 minutes (plus resting time) is everything you’ll need! 1…          2…                        3 … and these cookies are ready to serve!

I got this recipe from the best aunt in the whole wide world (xoxox <3), because it actually is her grandma’s recipe and if it has outlasted the last 4 generations, then it sure must be fantastic, doesn’t it?

Let’s start baking, err, preparing! 

For the Truffles (makes 100 Truffles) you will need:IMG_2885 eng

  • 38dag (=380g) powdered sugar, sifted
  • 13dag (=130g) grated coconut
  • 7dag (=70g) cake flour, sifted
  • 2 Pkg vanilla sugar
  • 2 tbsp cocoa powder
  • 25dag (=250g) butter, melted
  • 2-3 tbsp rum (as you please)

Once you have all the ingredients and equipment ready, DO NOT turn on your oven, because today it’s his day off. 🙂

Add all the ingredients to one large bowl and use a tablespoon to stir it all together until the mixture is thoroughly combined. Put the bowl into the fridge and allow the mixture to rest for 1-2 hours to get solid.

Flour, coconut and sugar + cocoa and vanilla + butter and rum. Stir thoroughly until the mixture is well combined!

After 1-2 hours, once the mixture is solid, the forming can begin. Use a teaspon as measuring tool and take a heaped teaspoonfull of the mixture (this ensures that all your truffels will be approximately the same size) into your hands and roll it around until you have a round and smooth truffle. Reapeat until there is no more of the mixture left.IMG_2900I like to roll the formed truffles through some grated coconut, but this step is optional. However, if you do, the truffles won’t be as sticky and will look a little bit like snowballs. 😀

For rolling (optional!) (for 100 truffles) you will need:

  • 30g grated coconut

Roll every formed truffle in the grated coconut until completely covered and line them up next to one another. After a couple of minutes you can start stacking the rum truffles. In a jiffy these delicious truffles will be done!
