Raspberry Lemon Curd Cake

IMG_3283 cutI was asked to bake the birthday cake for my brother-in-law-to-be (Beware: Horde of dashes!). It should taste like lemon and raspberry, just like my Raspberry Lemon Cupcakes (recipe will follow :-)). Since I didn’t want to throw the raspberries directly into the batter and a simple lemon sponge with raspberry buttercream seemed uninspired, I created this fresh, fruity and slightly sour summer cake. This cake will give you a warm summer feeling on any cold winter day! 😀

The cake consists of 6 layers of fluffy vanilla sponge that is alternatingly filled with 3 layers of homemade Lemon Curd and 2 layers of fruity raspberry jam. Finally, the cake is coated with simple Meringue Frosting (the birthday boy’s favorite frosting) that goes so perfectly with the intense flavours of the cake.

I had to learn the hard way that the transportation of wobbly cakes is a tricky business with my New Year’s Chocolate Lemon Curd Cake but now it paid off because this time I used a Bubble Tea Straw to stabalize my cake and it made it to the party in one piece and unharmed.

The cake was crazy popular with all the birthday party guests because the flavors complement each other so well. I can’t wait to bake this cake again! 😛

“Big hero 6” Sweet Table – Everything Coconut Cake

CollageI have always wanted to do a Sweet Table with an animation movie theme and I finally used the movie “Big hero 6″ as an opportunity to do so. I can now proudly present to you my Tofifee Cupcakes, Everything Coconut Cake and marshmallow figures in the style of the robot from the movie, “Baymax”! 😀

A cake was a must as central piece of my “Big hero 6” Sweet Table and it had to fit the overall theme. I wanted it to be white, but I didn’t want plain vanilla cake and a lot of white chocolate, because that’s just too sweet for my liking. Since I had already used candy for my cupcakes, it seemed obvious to stick with candy and so I decided on doing a Rafaello inspired cake.

Surprisingly, I had never before attempted to do a coconut cake, or cupcakes for that matter. So I had to come up with an all NEW recipe…

I wanted my cake to be super duper moist, not too sweet (- Rafaello Cake recipes tend to be sweet, sweeter and nothing but sweet) and it had to be packed with grated coconut (less flour, more coconut). Additionally, since Rafaello is a coconut-almond confection (per Wikipedia definition :-D), it was important to me to also account for that almond taste somehow. Finally, I came up with the perfect recipe for my Everything Coconut Cake – coconut-almond cake with coconut buttercream covered in even more grated coconut. Pure coconut heaven! 😀

Often new recipes can go wrong, but this time everything turned out exactly as planned AND BETTER. The cake is extremely moist and super coconutty with the perfect hint of almonds. The only slightly sweet cake works great in combination with the cream cheese buttercream with the roasted coconut husk in it and the Malibu for extra flavoring. And don’t even get me started on the snowflake look of the cake – it’s adorable and great for the season!

IMG_3531 in and outMy Everything Coconut Cake consists of 4 layers of the moistest coconut-almond cake filled with my tasty Coconut Cream Cheese Buttercream Frosting, coated in white ganache and sprinkled with coconut husk.

“Baymax” Sweet Table – Marshmallow-Baymax

IMG_3401 vglThese Marshmallow-robots can be made childishly simpel and fast out of less than 5 marshmallows… As decoration, for snack-time or as tinkering-project for the little ones – these sweet fellows are fun for everyone! 😀

“Big Hero 6” Sweet Table – Toffifee-Cupcake

CollageI am a huge fan of Disney and animation movies.

I have seen every single Disney movie in theaters for as long as I can remember (no exceptions!). There is only one non-animation movie on my “Top 10 of favourite movies”-list. I can easily beat anyone in Trivial Pursuit Disney and I can name the corresponding movie and sing along to almost all major Disney songs. 🙂 In 2012, when Lorax came out, I simply had to buy the DVD during my America-trip (it can’t be played on European DVD-players or playstations or computers – I tried:-() and I forced my boyfriend to bring a copy from his visit to South-Africa too – withbthe special edition, I now own 3 different copies of the movie. 😀

Tiramisu Mini-Cupcake

IMG_3249cutAs a university student one learns to live without many a thing out of a lack of time, but mostly out of a lack of money. 😛 However, there is one thing no student would be able to survive without during those long night hours of studying and that is coffein!

Personally, I don’t really enjoy coffee unless it doesn’t taste like coffee 😀 and because I am too lazy to brew myself my beloved cup of Vanilla Latte with a double shot of caramel at home, these little coffee cupcakes (from the book Cupcakes  by Peggy Proschen – highly recommended) have become my lifesavers.

Wether regular, jumbo or miniature size – these cupcakes IMG_3453taste heavenly delicious like tiramisu – entirely without raw egg, with chocolate center. ❤
