Douffins – Donut Muffins

IMG_4272In time for the weekend, here now the promised instructions on how to make Douffins aka Muffnuts! 😉 I got the recipe for this hybrid dessert, which combines the look and fluffiness of a muffin with the taste of Cinnamon Sugar Donuts, from the lovely Küchenmeedchen and it really is worth a try.

So if you too, like me, have a hard time choosing whenever you are standing in front of a dessert wagon, then fear no longer for never decide between fluffy muffins and sugary doughnuts again you must!

IMG_4293cutDouffins are made super fast and easily and they still taste good after even a week (a bit crunchy on the outside, but pure deliciousness inside ;-))! ❤

Let’s start baking!

For the batter (makes 12 Douffins) you will need:IMG_4171 eng1

  • 150g sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon
  • 75g butter, melted
  • 180ml milk
  • 200g flour
  • 2 tsp baking powder

Once you have all the ingredients and equipment ready, turn your oven to 350°Fahrenheit/180°Celsius air circulation (390°Fahrenheit/200°Celsius bottom and top heat) and position 12 muffin liners in your baking tray.

Combine sugar, egg, vanilla, nutmeg and cinnamon in a bowl and stir untill everything is well combined. Add first the melted, but not too hot butter and then the milk stirring every time. Lastly, fold in the fllour. Done!

IMG_4172Fill the batter into the muffin liners and bake for 18-20 minutes or until golden brown. Insert a toothpick if you are unsure – if it comes out clean, they are good to go!

For the coat you will need:IMG_4180 eng

  • 50g butter, melted
  • 200g sugar
  • 1 tsp cinnamon

Wait a couple of minutes until the Douffins are cool enough for you to hold them in your hand, then brush butter onto the top and gently dip them into the cinnamon sugar mixture. Make sure the surface is completely covered! I gave my Muffnuts a second dip after a minute or so to ensure they are well covered and a lot of the cinnamon deliciousness stuck to them! 🙂

IMG_4191Tip: Muffnuts are also very tasty if they, like many Doughnuts, are filled with jam (e.g. raspberry). There are two options: You can either put a generous teaspoon of jam into the center of each filled muffin liner before baking or you can fill the already baked Muffnuts with jam using a filling tip.
