1-2-3 Chocolate Cornflakes Cookies

The 24th is right around the corner and for everyone looking for a last minute cookie recipe, I have the simple, fast and chocolaty solution right here: 3 ingredient cornflakes cookies in only 3 simple steps and NO baking required! Just 1. Melt, 2. Mix, 3. Mount and you are done!

Or would you rather prefer some Vanilla Crescents or Rum Truffles or Gingerbread or Coconut Macaroons or Buttered Bread Cookies?

Let’s start ba…making cookies!

For the cookies (ca. 50 cookies) you will need:

  • 200g dark chocolate, broken into small pieces
  • 200g milk chocolate, broken into small pieces
  • (20g coconut fat- optional, but makes the cookies shiny)
  • 100g cornflakes

Once you have all the ingredients ready, put the chocolate pieces and optional coconut fat into a large bowl. Use a double boiler to melt the chocolate. It is important that the water is not boiling but solely simmering and that the bowl does not touch the water but is heated by the steam. You may chop the chocolate beforehand to speed this step up but that usually means a huge mess :-P, so I prefer stiring a little longer instead.

When the chocolate has melted, youimg_8189cut can take the bowl off the double boiler and fold in the cornflakes until no more yellow can be spotted. Use a teaspoon to form small cornflakes heaps on parchment paper.

Allow a few hours for the chocolate to set and enjoy! ❤

Tip: You may adapt the recipe according to your taste – use more or less milk chocolate, maybe even white chocolate or add nuts!?! Everything is possible!
